Booking hotels is a simple task.
In all countries I visited there was always a wide selection of accommodation to fit any budget.Obviously the prices go up the closer you get to high season, but if you'll be creative and clever about choosing a less popular destination you will be able to enjoy much better prices.

Booking through the internet gives you the opportunity to see what selection there is, what fellow travelers have to say, and most importantly, enable you to compare prices and find the best option for your budget and traveling style.
There is no good and bad time to find a cheaper hotel, so I just look for accommodation that fits my budget whenever need it.
From my experience, when traveling as a large group it's easier, cheaper and more comfortable to rent an apartment rather than a family room at a hotel.

booking.com – my favorite when it comes to online bookings. It's easy to use, reliable and has great costumer service. booking.com offers best price guarantee and loyalty program discounts.
TripAdvisor Hotels – offers hotel comparisons together with travelers reviews.
Priceline – "Name Your Own Price" system allows you to place bids on accommodations that have some of their details hidden from you. The details will be revealed if your bid is accepted.
Word of advice: this option best suits areas with a wide offering of hotels, such as city centers. For you to score a good deal start by looking at prices on Booking.com or Hotels Combined, that way you'll know the prices and figure out how much to bid.

Hotwire – also allows you to bid on hotels and save a lot more money than just by booking directly.
Airbnb – private home rentals. This is probably the site I use most! Airbnb allows me not only to save money, but also the chance to meet new local friends. It's my favorite way to travel and get to know the real life at the country I visit.
